We've been having a heatwave here in Pittsburgh. No complaints here though, I'll take this hot weather over snow any day. By 11:00 a.m. Sunday morning, it was 85 degrees and climbing. I couldn't think of a better way to spend it but poolside at my daughter's with her and her children.

I didn't swim though. I will eventually. I'm happy sitting poolside, retrieving the beach ball when it's hit out of the pool, eating DumDums with the boys and comparing tongue colors, soaking up the rays, catching up with my daughter, listening to the sounds of summer - birdies chirping, crickets humming, lawns being mowed, just being.

When it's too hot for cooking, toss together this main dish salad.
Shrimp Stuffed Tomatoes
This recipe makes 4 servings.
1 lb. cleaned and cooked shrimp, chopped
1/2 cup chopped onion
1/2 cup mayonnaise
1 1/2 TBS lemon juice from 1/2 lemon
Salt and pepper to taste
4 tomatoes
Lettuce
In a mixing bowl, combine the first 5 ingredients.
Line 4 individual bowls with lettuce greens.
Cut each tomato into wedges, cutting down to within 1/2 inch of bottom (do not cut all the way through tomato). Place each tomato on a bed of lettuce. Fill each tomato with shrimp salad. Serve.
